1First thaw your turkey. Wash it well and pat it dry with paper towels. Rub spices allover your turkey. Feel free to add spices that you like just don't forget the salt and pepper and lemon juice. Let sit.

2While marinating your turkey, you can make your stuffing. Toast the bread and walnut first. Make sure it is toasted not burned.

3In a saute pan, melt three tablespoons of butter and add bread cubes in it. toast it well until light brown.

4In a large sauce pan, saute chopped onions and celery for five to ten minutes. Add the bread, the walnuts, green apples chopped, currants, raisins and parsley. Add chicken stock or turkey stock. Season with salt and pepper.

5Cook stuffing for 30 minutes. You don't want to cook the apples through. Add stock as needed. Remove from heat and let it cool.

6Preheat oven to 450 degrees. Meanwhile, stuff the turkey with the stuffing and secure the openings. Wrap foil around the turkey, place it in a pan and cover the lid with foil. Reduce oven heat after 15 minutes to 325 degrees.

7Roast turkey for an 2 hours depending on the size of the bird. remove foil 30 minutes before it is done to brown the turkey's skin. Plate, carve and serve.
Tips and Warnings
Brush in oil to seal in flavor.
You don't want to overdo your turkey because when over cooked meat gets tough and rubbery.
Wash your hand before and after you cook the turkey.
