1Prepare your ingredients: a gallon of whole milk, 2 tsp of citric acid, 1/2 tsp calcium chloride in 2 Tbs distilled water, 1/2 rennet tablet in 1/4 cup distilled water, 1/2 teaspoon flaked salt

2Pour milk into a stainless pot and put on the stove over medium heat. Add the citric acid and diluted calcium chloride. Stir continuously until it reaches 88°F.

3Remove from heat and let set until curd is formed. With a strainer drain the curd with as much whey as possible and place it in a microwavable dish.

4Microwave curd for one minute. Press curd and remove whey.By this time, the cheese becomes sticky. If not, let it stay a little longer inside the microwave for about 20-30 seconds.

5Add flaked salt bit by bit and knead the cheese. place the cheese back in the microwave and heat for one more minute. If it sticks to the spoon and pulls away from the bowl then it is ready to be stretched.

6Stretch the cheese and let it cool. Refrigerate and be sure to use it within one week.
Tips and Warnings
Buy local milk which didn't undergo much processing
When you stretch your cheese, always pull it in the same direction.
Freeze mozzarella if cheese is too soft for shredding.
