1Heat one gallon of skim or low-fat milk to 190 F, stirring constantly.

2Skim milk is just fine for cottage cheese as the fat becomes part of the whey (the part that you don't eat). Use a candy thermometer to ensure that the milk reaches the desired temperature.

3Remove hot milk from stove and while it's still spinning in the pot from the constant stiring, add one half cup of white vinegar and allow the mixture to cool without stirring.

4When cool, about an hour, pour the curds (the cottage cheese) and whey (the greenish liquid) into a strainer.

5Pour the curds into a bowl and sprinkle with about teaspoon of salt (to taste) and mix well.

6If you like a creamier cottage cheese add a little bit of cream or half and half.
