A cottage cheese is a healthy cheese! It is low-fat, low-carb and perfect for your diet. Follow the steps below and you can start enjoying your very own home-made cottage cheese!

How To / Instruction

Difficulty: Normal
  • Step

    1

Heat one gallon of skim or low-fat milk to 190 F, stirring constantly.

  • Step

    2

Skim milk is just fine for cottage cheese as the fat becomes part of the whey (the part that you don't eat). Use a candy thermometer to ensure that the milk reaches the desired temperature.

  • Step

    3

Remove hot milk from stove and while it's still spinning in the pot from the constant stiring, add one half cup of white vinegar and allow the mixture to cool without stirring.

  • Step

    4

When cool, about an hour, pour the curds (the cottage cheese) and whey (the greenish liquid) into a strainer.

  • Step

    5

Pour the curds into a bowl and sprinkle with about teaspoon of salt (to taste) and mix well.

  • Step

    6

If you like a creamier cottage cheese add a little bit of cream or half and half.

Tips and Warnings

  • Always use low-fat milk, no substitute.

  • Keep it clean and healthy.

  • Have fun making it!
